Quality control and testing is one of the secrets of producing good coffee.
The protocol for tasting coffee is named Cupping.
Cupping is also used to find out which coffee estate makes the best coffee of Panama !
With the photo's on this page we hope to give you an inside in the Cupping process.
The purpose of this page is not to make an accurate report of the cupping contest,
but simply to give you a glimpse in the process to support what we tell and do in the Kotowa Coffee tour.

What is needed? Coffee. (this is a sample tray of all coffee's in the competition) Lots of warm water. Cups, lost of cups. Name tags A team of international coffee snobs (24 !) with their team of assistants.

Then it starts...three days of cupping ! A good nose will help... First you smell the dry ground coffee. Then you write. (what comes up first in your mind.) Next you taste Then you write. The coffee will be judged for 10 items on a scale from 0 to 10 points. The perfect coffee will have a 100 points.

You taste and smell some more And you write some more after every round the coffee experts talk.... to evaluate the results. This years winner has 94.6 points and is Cafe Esmeralda from the family Peterson. This was expected Esmerald won last year best coffee of the world in Seattle The runner up is Bambito estate of the family Armar Sitton. Number three Carmen estate of the family Aguilera Franceschi.
